Departing Bankstown Airport this morning, fly over the stunning Blue Mountains enroute to Orange. World renowned for its gourmet restaurants and award winning wineries, rolling countryside and heritage towns and villages. On arrival, check into your boutique accommodation where you have some time at leisure to freshen up and explore the town. This evening, set off to Printhie Wines, a family-owned, award-winning cool-climate vineyard and a 5 star rated Halliday winery and cellar door. Here you will have an exclusive meet-the-maker experience where you will learn about the history and style of wine produced in this area. 

As the sun sets, get comfortable as you sip on Swift Sparkling, made from the highest vineyards in New South Wales, on the slopes of the extinct volcano Mt. Candoblas. Awarded ‘Best Sparkling’ at the New South Wales Wine awards for the last two years running, and acclaimed by Australia’s Champagne expert, Tyson Stelzer, as ‘the best sparkling wine brand in New South Wales’, it was inducted into his Sparkling Hall of Fame in 2016. As the sky changes colour and the sun slips away, enjoy fresh oysters served as the bubbles continue to flow and embrace the beauty of this region.

Today is all about following your tastebuds. Your day will be a combination of exclusive winery experiences and encounters with the wine makers themselves as well as a produce trail, as you eat your way through farm gate visits, sampling some of the finest food and wine in the region. 

Dinner this evening is an exciting fusion of Italian cuisine and Australian bush tucker. It may sound like an odd concept, but once you understand how both cultures work with what their local lands offer, it makes for an interesting, incredibly delicious, experience!

You will be joined by our local Indigenous guide who will share stories about dreamtime, politics and colonisation of the region. Imagine dishes like Braised Wallaby Shanks marinated in saltbush and native pepperberry, cooked with bush tomato and truffle infused local honey… or perhaps roasted wattleseed and macadamia waffles with Lilli Pilli cream and poached quandongs… Your mind will boggle at the unique flavours. Return to your hotel with a full belly and a wealth of fascinating knowledge.

This morning following breakfast, transfer to the airport for your private flight to Corynnia Station for a true Aussie outback experience. Corynnia Station is a busy 17,000 acre working property showcasing its unique, historic and truly Australian part of the world. Producing high quality M or m erino wool and meat from a flock of up to 11,000 sheep. The stations irrigated cropping programme includes cotton, grains and sheep fodder, all using technologically advanced methods.

Your time here will be warmed by campfires and hearty meals. Feeling active? Why not hit the court for a bit of tennis (balls and racquets are provided), take a dip in the pool, play croquet or enjoy nature walks. The station is incredible for bird watching, native wildlife and amazing huge skies. The sunsets are magical and the night sky will blanket you with a trillion stars.

2 nights Corynnia Station

Keen to see what happens on a busy station? Today you take a farm experience tour with your hosts or host? . Bruce’s passion is agriculture and Corynnia Station is a large farm producing irrigated crops and a quality M? or m erino sheep flock for wool and meat. Explore with Bruce as he guides you through areas of the farm where you will learn about the technologically advanced farming practices in growing the worlds best quality and highest yielding rice, cotton, rye grass and wool. Discover the benefits of planting genetically modified seed. See the historical 1920’s and 1940’s shearing sheds still in use today.

Farewell your hosts this morning as you fly off towards the New South Wales coastline. Upon landing at Shellharbour airport, you will be met and transferred to one of the last working farms skimming the coastline of Gerringong. Your home for the next two nights is Ocean Farm – a secluded hideaway nestled amongst the rolling hills of the South Coast.

Boasting absolute privacy, panoramic ocean views and breathtaking scenery, Ocean Farm is the ultimate destination to experience luxury amidst an untouched landscape. Embrace the large comfortable bedrooms, a well-equipped kitchen, open log fireplace, infinity pool, entertainment room, and an all-encompassing deck featuring sweeping coastal views.

Take a walk down the grass track for a long lunch or quick dip at Gerringong’s Werri Beach, swim and laze on the deck, sip wine in front of the fire, breathe the clean country air, or simply just unwind in bed. The property is set in it’s own pocket of rainforest, hidden from neighbouring properties, and is home to friendly free range cattle and horses.

2 nights Ocean Farm

This morning, set off for a scenic drive into the beautiful Kangaroo Valley. Kangaroo Valley is a rural idyll and the original home of the Wodi Wodi group of the Dharawal people, but today exudes a verdant beauty with a valley littered with farms, vineyards and a quaint township which evokes a glimpse of the past.  

Your day begins with our signature ’Canoes, Champagne and Canapés’ adventure. Immerse your senses in the sheer beauty of this magical waterway with its ancient sunken forest and indulge your taste buds with wild native canapés and a local award-winning cold-climate wine. You are then transferred to our lunch venue either for a 2-course meal ??. Enjoy mouth watering paddock to plate dishes created by local chefs, who source and support local producers. Continue on to Cherry Tree Hill Winery for a tasting before venturing further south along the beautiful coastline as you learn more about the connection of the land to the nation’s First People.  

Return to Gerringong this afternoon where you will have time at leisure to explore the town and beaches before returning to your accommodation.

This morning following breakfast, it is time to transfer back to the airport for your private flight back to Bankstown.
